Ingredients:

  • 250ml sea buckthorn juice (make from about 500ml of frozen sea buckthorn berries or buy about 6 sea buckthorn shots)
  • 170ml cider vinegar
  • 110g sugar (your choice, brown or white)
  • 85g honey
  • 2 tbsp chilli powder
  • 1 tbsp ground coriander
  • 1 tbsp ground cumin
  • 1kg chicken thighs
  • 1 tbsp olive oil
  • salt and pepper

Method

  • In a saucepan combine the sea buckthorn juice, cider vinegar, sugar, honey, chilli powder, coriander and cumin. Bring to the boil, then reduce heat and simmer for 35-45 minutes or until sauce is reduced.

  • In another saucepan add the olive oil and bring to a high heat. Season the chicken and cook in the pan until cooked through.

 

  • Add the sea buckthorn glaze and simmer for 1-2 minutes, coating the chicken.

 

  • Serve immediately.
