Honey and sea buckthorn glazed chicken

Ingredients:
- 250ml sea buckthorn juice (make from about 500ml of frozen sea buckthorn berries or buy about 6 sea buckthorn shots)
- 170ml cider vinegar
- 110g sugar (your choice, brown or white)
- 85g honey
- 2 tbsp chilli powder
- 1 tbsp ground coriander
- 1 tbsp ground cumin
- 1kg chicken thighs
- 1 tbsp olive oil
- salt and pepper
Method
- In a saucepan combine the sea buckthorn juice, cider vinegar, sugar, honey, chilli powder, coriander and cumin. Bring to the boil, then reduce heat and simmer for 35-45 minutes or until sauce is reduced.
- In another saucepan add the olive oil and bring to a high heat. Season the chicken and cook in the pan until cooked through.
- Add the sea buckthorn glaze and simmer for 1-2 minutes, coating the chicken.
- Serve immediately.
