Zesty sea buckthorn butter

Ingredients:
2 tablespoons sea buckthorn juice (25ml) – either buy a sea buckthorn shot for ready made juice (buy here) – each shot is about 40ml – or make your own from around 50g of our organic sea buckthorn berries – buy here )
225g butter
400g caster sugar
Method
- First, if you are making the juice from berries, make the juice by blending or crushing some berries and passing through a sieve. Make sure that you remove any seeds and pilth. If you are buying the sea buckthorn shots then you can skip this step.
- Combine the juice and the sugar to make a syrup
- Whip the butter in an electric mixer until light and fluffy
- Add the sugar syrup mix to the butter
- Combine with a fork or blend in the electric mixer.
- Cool and serve (suggest you spread on a sea buckthorn tea loaf!)
